This Raw Pesto Zoodles dish is something we know all you vegetarians, vegans, raw vegans and paleo peeps would surely enjoy! Instead of cooked pasta, we used zucchini... yes zucchini to make vegetable spaghetti! All you need is a spiralizer to turn veggies into 'noodles' and that's one gadget you must have if you are getting into a raw vegan or plant-based diet.
1 zucchini, spiralized
2 tbsp homemade arugula pesto (try Noelle's recipe right here)
3 cherry tomatoes, sliced into half
1 tsp chopped spring onions
Place spiralized zucchini in a bowl. Add cherry tomatoes, arugula pesto then top with spring onions and sesame seeds. Serve and enjoy! Make sure to mix all the ingredients before eating.
